Ingredients
1 lb boneless, skinless chicken breasts, cut into cubes
2 tablespoons olive oil
1 tablespoon Greek seasoning
1 lb baby potatoes, quartered
1 red bell pepper, cut into strips
1 yellow bell pepper, cut into strips
1 red onion, cut into wedges
1/2 cup pitted kalamata olives
1/4 cup feta cheese, crumbled
Directions
Preheat oven to 400F (200C).
In a large bowl, toss the chicken with the olive oil and Greek seasoning. Add the potatoes, bell peppers, and onion and toss to combine.
Transfer everything to a large sheet pan and spread out in an even layer.
Bake for 25-30 minutes, or until the chicken is cooked through and the potatoes are tender.
Remove from oven and top with kalamata olives and feta cheese.
Serve with a side of Greek salad or tzatziki.
