Ingredients

  • 1/2 pound of salmon, cooked and flaked
  • 1 cup of cooked brown rice
  • 1 cup of cooked whole wheat pasta
  • 1/2 cup of diced red bell pepper
  • 1/2 cup of diced yellow bell pepper
  • 1/2 cup of diced green bell pepper
  • 1/2 cup of diced red onion
  • 1/2 cup of diced cucumber
  • 1/2 cup of diced cherry tomatoes
  • 1/2 cup of chopped fresh parsley
  • 1/2 cup of crumbled feta cheese
  • 1/4 cup of olive oil
  • 2 tablespoons of red wine vinegar
  • 2 tablespoons of freshly squeezed lemon juice
  • 1 teaspoon of dried oregano
  • Salt and pepper to taste

Directions

  1. In a large bowl, combine the cooked salmon, brown rice, pasta, bell peppers, onion, cucumber, tomatoes, and parsley.
