Ingredients
1 package extra-firm tofu, drained and cubed
2 tablespoons vegetable oil
1 red bell pepper, diced
1 onion, diced
1/2 cup vegetable broth
1/4 cup gluten-free tamari or soy sauce
2 tablespoons agave nectar or maple syrup
2 tablespoons Sriracha or other hot sauce
1 ripe mango, peeled and diced
1/4 cup chopped fresh cilantro
Salt and pepper, to taste
Cooked brown or white rice, for serving
Directions
Heat the oil in a large skillet or wok over medium heat.
Add the tofu and cook until golden brown, about 5 minutes.
Add the bell pepper and onion and cook until softened, about 5 minutes.
Add the vegetable broth, tamari, agave nectar, and Sriracha and bring to a simmer.
Add the mango and cilantro and cook until heated through, about 2 minutes.
Season with salt and pepper to taste.
Serve over cooked brown or white rice.
