Spicy Vegan Mango and Tofu Stir Fry

Ingredients

  • 1 package extra-firm tofu, drained and cubed
  • 2 tablespoons vegetable oil
  • 1 red bell pepper, diced
  • 1 onion, diced
  • 1/2 cup vegetable broth
  • 1/4 cup gluten-free tamari or soy sauce
  • 2 tablespoons agave nectar or maple syrup
  • 2 tablespoons Sriracha or other hot sauce
  • 1 ripe mango, peeled and diced
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper, to taste
  • Cooked brown or white rice, for serving

Directions

  1. Heat the oil in a large skillet or wok over medium heat.
  2. Add the tofu and cook until golden brown, about 5 minutes.
  3. Add the bell pepper and onion and cook until softened, about 5 minutes.
  4. Add the vegetable broth, tamari, agave nectar, and Sriracha and bring to a simmer.
  5. Add the mango and cilantro and cook until heated through, about 2 minutes.
  6. Season with salt and pepper to taste.
  7. Serve over cooked brown or white rice.
