Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 large yams, peeled and diced
  • 2 turnips, peeled and diced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • 4 cups vegetable broth
  • 1/4 cup all-purpose flour
  • 1/2 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 cup shredded sharp cheddar cheese
  • 1/2 cup shredded Parmesan cheese
  • 1/4 cup butter
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup buttermilk

Directions

  1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until the onion is soft and transparent, about 5 minutes.
  2. Add the yams and turnips to the pot and cook for 5 minutes, stirring occasionally. Add the thyme, oregano, paprika, and cayenne pepper and cook for another minute.
  3. Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat to low, cover the pot, and simmer for 20 minutes or until the vegetables are tender.
  4. In a small bowl, whisk together the flour and milk until smooth. Pour the mixture into the pot and stir to combine. Simmer for 5 minutes or until the stew has thickened.
  5. Season the stew with salt, black pepper, garlic powder, and onion powder. Stir in the cheddar and Parmesan cheese.
  6. In a small bowl, combine the butter, flour, baking powder, baking soda, and salt. Using a pastry blender or your fingertips, work the butter into the flour until the mixture resembles coarse crumbs. Stir in the buttermilk and mix until just combined.
  7. Drop small spoonfuls of the biscuit dough onto the stew. Cover the pot and simmer for 15 minutes or until the biscuits are cooked through.
  8. Serve the stew hot, topped with the mini biscuits.
