- 2 tablespoons olive oil
- 1 onion, diced

- 1/2 cup shredded sharp cheddar cheese
- 1/2 cup shredded Parmesan cheese
- 1/4 cup butter
- 1/2 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 cup buttermilk
Directions
- Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until the onion is soft and transparent, about 5 minutes.
- Add the yams and turnips to the pot and cook for 5 minutes, stirring occasionally. Add the thyme, oregano, paprika, and cayenne pepper and cook for another minute.
- Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat to low, cover the pot, and simmer for 20 minutes or until the vegetables are tender.
- In a small bowl, whisk together the flour and milk until smooth. Pour the mixture into the pot and stir to combine. Simmer for 5 minutes or until the stew has thickened.
- Season the stew with salt, black pepper, garlic powder, and onion powder. Stir in the cheddar and Parmesan cheese.
- In a small bowl, combine the butter, flour, baking powder, baking soda, and salt. Using a pastry blender or your fingertips, work the butter into the flour until the mixture resembles coarse crumbs. Stir in the buttermilk and mix until just combined.
- Drop small spoonfuls of the biscuit dough onto the stew. Cover the pot and simmer for 15 minutes or until the biscuits are cooked through.
- Serve the stew hot, topped with the mini biscuits.
