Ingredients
1 (15-ounce) package refrigerated pie crusts
6 large eggs
1 cup whole milk
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1 cup grated cheese (cheddar, Swiss, or Gruyere)
1/2 cup diced ham (optional)
Directions
Preheat oven to 375 degrees F (190 degrees C). Grease a mini muffin tin.
Roll out the pie crusts on a lightly floured surface. Cut out circles with a biscuit cutter or a glass and press them into the mini muffin tin.
In a medium bowl, whisk together the eggs, milk, salt, pepper, and cheese. Stir in the diced ham, if desired.

Bake for 20-25 minutes, or until the quiches are set and golden brown.
Remove from oven and let cool for 5 minutes before serving.
