Ingredients

  • 1 (15-ounce) package refrigerated pie crusts
  • 6 large eggs
  • 1 cup whole milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 cup grated cheese (cheddar, Swiss, or Gruyere)
  • 1/2 cup diced ham (optional)

Directions

  1. Preheat oven to 375 degrees F (190 degrees C). Grease a mini muffin tin.
  2. Roll out the pie crusts on a lightly floured surface. Cut out circles with a biscuit cutter or a glass and press them into the mini muffin tin.
  3. In a medium bowl, whisk together the eggs, milk, salt, pepper, and cheese. Stir in the diced ham, if desired.
  4. Pour the egg mixture into the prepared muffin tin, filling each cup about 3/4 full.
  5. Bake for 20-25 minutes, or until the quiches are set and golden brown.
  6. Remove from oven and let cool for 5 minutes before serving.
