Ingredients
- 1 1/2 cups graham cracker crumbs
- 1/3 cup butter, melted
- 3 tablespoons sugar
- 4 egg yolks
- 1 can (14 ounce) sweetened condensed milk
- 1/2 cup key lime juice
- 1 teaspoon grated lime zest
- 1/2 cup heavy cream
- 2 tablespoons sugar
- 1/2 teaspoon vanilla extract
Directions
- Preheat oven to 375 degrees F (190 degrees C).
- In a medium bowl, mix graham cracker crumbs, melted butter, and 3 tablespoons sugar. Press into the bottom and sides of a 9 inch pie plate.
- Bake at 375 degrees F (190 degrees C) for 7 minutes. Remove from oven and cool.
- In a medium bowl, whisk together egg yolks, condensed milk, lime juice, and lime zest. Pour into the cooled crust.
- Bake at 375 degrees F (190 degrees C) for 15 minutes. Allow to cool.
- In a medium bowl, whip cream until soft peaks form. Add 2 tablespoons sugar and vanilla, and whip until stiff peaks form. Spread over cooled pie.
- Chill for several hours before serving.
