Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup butter, melted
  • 3 tablespoons sugar
  • 4 egg yolks
  • 1 can (14 ounce) sweetened condensed milk
  • 1/2 cup key lime juice
  • 1 teaspoon grated lime zest
  • 1/2 cup heavy cream
  • 2 tablespoons sugar
  • 1/2 teaspoon vanilla extract

Directions

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. In a medium bowl, mix graham cracker crumbs, melted butter, and 3 tablespoons sugar. Press into the bottom and sides of a 9 inch pie plate.
  3. Bake at 375 degrees F (190 degrees C) for 7 minutes. Remove from oven and cool.
  4. In a medium bowl, whisk together egg yolks, condensed milk, lime juice, and lime zest. Pour into the cooled crust.
  5. Bake at 375 degrees F (190 degrees C) for 15 minutes. Allow to cool.
  6. In a medium bowl, whip cream until soft peaks form. Add 2 tablespoons sugar and vanilla, and whip until stiff peaks form. Spread over cooled pie.
  7. Chill for several hours before serving.
