Ingredients

  • 2 cups all-purpose flour
  • 2 large eggs
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/4 cup warm water

Directions

  1. In a large bowl, whisk together the flour and salt.
  2. Add the eggs, olive oil, and warm water and mix with a fork until the ingredients form a shaggy mass.
  3. Using your hands, knead the dough in the bowl for about 5 minutes until it forms a smooth, elastic ball.
  4. Wrap the dough tightly in plastic wrap and let it rest for 30 minutes.
  5. When you are ready to make the pasta, cut the dough into 4 equal pieces and roll them out with a rolling pin.
  6. Using a pasta machine, roll the dough through the machine at the widest setting and gradually reduce the thickness of the dough until it is thin enough for your desired shape.
  7. Cut the dough into your desired shape using a knife or pasta cutter.
  8. Cook the pasta in boiling salted water for 2-3 minutes.
  9. Drain the pasta and serve with your favorite sauce.
