Ingredients
1 cup all-purpose flour
1/2 cup polenta
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup butter, room temperature

Directions
Preheat oven to 375°F (190°C). Grease a baking sheet with butter or non-stick spray.

In a large bowl, cream together butter and sugar until light and fluffy. Beat in egg, lemon zest, and lemon juice until combined.
Stir in the dry ingredients and mix until just combined. Do not over mix.
Drop the dough by tablespoonfuls onto the prepared baking sheet. Bake for 10-12 minutes, until lightly golden.
Remove from oven and let cool on a wire rack.
