- 1 cup all-purpose flour
- 1/2 cup polenta
- 1 teaspoon baking powder

- 1/2 cup butter, room temperature
- 1/2 cup sugar

Directions
- Preheat oven to 375°F (190°C). Grease a baking sheet with butter or non-stick spray.
- In a medium bowl, whisk together flour, polenta, baking powder, and salt.
- In a large bowl, cream together butter and sugar until light and fluffy. Beat in egg, lemon zest, and lemon juice until combined.
- Stir in the dry ingredients and mix until just combined. Do not over mix.
- Drop the dough by tablespoonfuls onto the prepared baking sheet. Bake for 10-12 minutes, until lightly golden.
- Remove from oven and let cool on a wire rack.
