Ingredients

  • 2 tablespoons butter
  • 1 onion, finely chopped
  • 2 cups diced cooked ham
  • 1 red bell pepper, diced
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 6 eggs
  • 1/2 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/2 cup grated cheddar cheese

Directions

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Melt butter in a large skillet over medium heat. Add onion, ham, and bell pepper, and sauté until vegetables are softened, about 5 minutes. Season with oregano and garlic powder, and remove from heat.
  3. In a large bowl, whisk together eggs, milk, salt, and pepper. Stir in ham mixture, and pour into a 9x13 inch baking dish.
  4. Bake in preheated oven for 20 minutes. Sprinkle cheese over top, and continue baking until eggs are set, about 10 minutes more.
