Ingredients

  • 1 pound cooked shrimp
  • 2 avocados, pitted and chopped
  • 1 head of lettuce, chopped
  • 1/4 cup chopped red onion
  • 1/4 cup chopped fresh parsley
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • Salt and pepper to taste

Directions

  1. In a large bowl, combine the shrimp, avocado, lettuce, onion, and parsley.
  2. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper to make a dressing.
  3. Pour the dressing over the salad and toss to combine.
  4. Serve immediately.
