Directions
In a large skillet, heat the olive oil over medium heat.

Add the chicken thighs and cook until golden brown, about 8 minutes.
Pour in the chicken broth and bring to a simmer.
Add the tomatoes and lime juice. Simmer until the chicken is cooked through, about 7 minutes.
Season with salt and pepper, to taste. Serve with a side of quinoa or rice.
