Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 3 cloves garlic, minced
  • 1 teaspoon oregano
  • 2 pounds boneless, skinless chicken thighs
  • 1 cup chicken broth
  • 1 cup diced tomatoes
  • 2 tablespoons lime juice
  • Salt and pepper, to taste

Directions

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the onion, bell pepper, garlic, and oregano. Cook until the vegetables are softened, about 5 minutes.
  3. Add the chicken thighs and cook until golden brown, about 8 minutes.
  4. Pour in the chicken broth and bring to a simmer.
  5. Add the tomatoes and lime juice. Simmer until the chicken is cooked through, about 7 minutes.
