1 large head of cauliflower, cut into small florets
1 tablespoon olive oil
1 teaspoon curry powder
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 cup heavy cream
1 cup grated Gruyere cheese
2 tablespoons freshly chopped parsley
Directions
Preheat oven to 400°F.
In a large bowl, toss together the cauliflower, olive oil, curry powder, garlic powder, onion powder, salt, and pepper until the cauliflower is coated. Spread the cauliflower onto a baking sheet and roast for 15 minutes, stirring once halfway through cooking.
Meanwhile, in a medium bowl, stir together the cream and Gruyere cheese. When the cauliflower is finished roasting, reduce oven temperature to 375°F.
Transfer the cauliflower to a 9-inch baking dish. Pour the cream and cheese mixture over the cauliflower and stir to combine. Bake for 25 minutes, or until the top is golden brown and bubbly.
Remove from oven and let cool for 10 minutes. Sprinkle with parsley and serve.
