Ingredients

  • 1/2 cup butter
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1/2 cup all-purpose flour
  • 2 cups chicken broth
  • 2 cups cooked, diced turkey
  • 1 cup frozen peas and carrots
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 9-inch unbaked pie crusts

Directions

  1. Preheat oven to 375 degrees F.
  2. In a large skillet, melt butter over medium heat. Add onion and garlic and cook until softened, about 5 minutes.
  3. Stir in flour and cook for 1 minute.
  4. Slowly add chicken broth, whisking constantly to avoid lumps.
  5. Add turkey, peas, carrots, thyme, salt, and pepper. Simmer for 5 minutes.
  6. Pour filling into a 9-inch pie plate lined with one of the pie crusts.
  7. Top with remaining pie crust and flute edges.
  8. Cut several slits in the top of the crust to allow steam to escape.
  9. Bake for 20 minutes, then reduce heat to 350 degrees F and bake for an additional 30 minutes, or until crust is golden brown.
  10. Let cool for 10 minutes before serving.
