- 1/2 cup butter, softened
- 4 ounces cream cheese, softened
- 1 cup all-purpose flour
- 1/2 cup powdered sugar
- 1 teaspoon peppermint extract
- 1/2 cup semi-sweet chocolate chips
- 2 tablespoons vegetable oil
Directions
- Preheat oven to 350 degrees F (175 degrees C).
- In a medium bowl, cream together butter and cream cheese until smooth.
- Gradually mix in the flour and sugar until combined.
- Stir in the peppermint extract.
- Form the dough into 1-inch balls and place on a lightly greased baking sheet.
- Bake for 10-12 minutes in the preheated oven, or until lightly browned.
- In a small bowl, melt the chocolate chips and vegetable oil together in the microwave, stirring every 30 seconds until smooth.
- Dip the cooled cheesecake bites into the melted chocolate and place onto wax paper to cool.
