Ingredients

  • 1/2 cup butter, softened
  • 1 cup sugar
  • 2 eggs
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon vanilla extract
  • 1/2 cup eggnog
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour 12 muffin cups.
  2. In a medium bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time. Stir in the nutmeg, cinnamon, vanilla extract, and eggnog. Combine the flour, baking powder, and salt; stir into the eggnog mixture just until blended. Spoon batter into the prepared muffin cups.
  3. Bake in the preheated oven for 18 to 20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean. Allow cupcakes to cool in the pan for 10 minutes before removing to cool completely on a wire rack.
