Ingredients

  • 1 head of cabbage, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 cups of mushrooms, sliced
  • 1 can of corn, drained
  • 1 can of black beans, drained and rinsed
  • 1 can of diced tomatoes, drained
  • 1 tablespoon olive oil
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon oregano
  • Salt and pepper to taste
  • 1 cup shredded cheese

Directions

  1. Preheat oven to 350F/180C.
  2. In a large skillet, heat olive oil over medium-high heat. Add onion, garlic, bell pepper, and mushrooms and sauté for 5 minutes.
  3. Add cabbage, corn, black beans, diced tomatoes, chili powder, cumin, smoked paprika, oregano, salt, and pepper. Stir to combine and cook for 10 minutes.
  4. Transfer the mixture to a 9x13 inch casserole dish. Sprinkle the shredded cheese over the top and bake for 25-30 minutes until the cheese is melted and the casserole is hot and bubbly.
  5. Serve warm and enjoy!
