Ingredients

  • 4 duck legs
  • 2 tablespoons of green curry paste
  • 1 can of coconut milk
  • 1 red bell pepper, diced
  • 1 onion, diced
  • 1 teaspoon of ground coriander
  • 2 tablespoons of fish sauce
  • 1 tablespoon of brown sugar
  • Salt and pepper to taste

Directions

  1. Preheat oven to 375°F.
  2. Combine curry paste, coconut milk, red bell pepper, onion, coriander, fish sauce, brown sugar, salt and pepper in a bowl and mix well.
  3. Place duck legs in a baking dish and pour the curry mixture over them. Bake for 25 minutes.
  4. Serve hot with steamed rice.
