This recipe combines the warm and spicy flavors of gingerbread with the crunchy texture of biscotti. Perfect for dunking in coffee or hot chocolate, these biscotti are a delightful treat for the holiday season or anytime you crave a cozy, homemade snack.

Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/2 cup molasses
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 cup chopped crystallized ginger
  • 1/2 cup chopped toasted almonds

Directions

  1. Preheat oven to 350°F and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, ginger, cinnamon, nutmeg, and cloves.
  3. In a separate bowl, cream together butter and brown sugar until light and fluffy. Add molasses, egg, and vanilla, and mix until combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms. Fold in crystallized ginger and almonds.
  5. Divide dough in half and shape each half into a log about 12 inches long and 2 inches wide on the prepared baking sheet.
  6. Bake for 25-30 minutes, or until firm to the touch. Remove from the oven and let cool for 10 minutes.
  7. Reduce oven temperature to 325°F. Using a serrated knife, slice each log into 1/2 inch thick slices.
  8. Place biscotti cut side down on the baking sheet and bake for an additional 10-15 minutes, flipping halfway through, until crisp and golden brown.
  9. Let biscotti cool completely on a wire rack before serving. Enjoy with a hot beverage or package as a homemade gift.

Interesting Facts
