This vegetarian tofu turkey recipe is perfect for Thanksgiving or any special occasion. The tofu is marinated in a savory blend of herbs and spices, then stuffed with a delicious mixture of vegetables, nuts, and cranberries. It's a festive and flavorful dish that everyone will love.

Ingredients

  • 1 block firm tofu
  • 1/4 cup soy sauce
  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1/2 cup mushrooms, chopped
  • 1/2 cup walnuts, chopped
  • 1/4 cup dried cranberries
  • 1 tsp thyme
  • 1 tsp sage
  • 1 tsp rosemary
  • Salt and pepper to taste

Directions

  1. Press tofu to remove excess water, then slice into two thin rectangles.
  2. Mix soy sauce, olive oil, thyme, sage, rosemary, salt, and pepper in a bowl.
  3. Marinate tofu in the mixture for 30 minutes.
  4. Saute onion, garlic, carrot, celery, and mushrooms in a pan until softened.
  5. Add walnuts, cranberries, and more herbs to the pan, cook for another 5 minutes.
  6. Place one tofu rectangle on a greased baking sheet, top with stuffing mixture, then add the second tofu rectangle on top.
  7. Bake at 350°F for 30 minutes, until tofu is firm and stuffing is golden brown.
  8. Slice and serve with gravy and cranberry sauce.
