Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup cold butter, cubed
  • 1/2 cup cold water
  • 1 small onion, chopped
  • 1 carrot, diced
  • 1 potato, diced

  • 1/2 cup corn
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste

Directions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, mix flour and cold butter using your fingertips until it resembles breadcrumbs. Slowly add cold water and knead until a dough forms. Wrap in plastic wrap and refrigerate for 30 minutes.
  3. In a skillet, sauté onion, carrot, potato, peas, corn, garlic, thyme, rosemary, salt, and pepper until vegetables are tender. Set aside to cool.
  4. Divide dough into 4 equal parts. Roll out each part into a 1/4 inch thick circle.
  5. Spoon vegetable mixture onto one half of each circle, leaving a border. Fold dough over filling and crimp edges to seal.
  6. Place pasties on a baking sheet lined with parchment paper. Bake for 30 minutes or until golden brown.
