Ingredients

  • 8 oz rice noodles
  • 2 tablespoons vegetable oil
  • 1 block firm tofu, pressed and cubed
  • 2 cloves garlic, minced
  • 1 red bell pepper, thinly sliced
  • 1 cup shredded carrots
  • 2 cups bean sprouts
  • 3 green onions, chopped
  • 1/4 cup chopped peanuts
  • 1/4 cup chopped cilantro
  • Lime wedges for serving

Directions

  1. Cook rice noodles according to package instructions. Drain and set aside.
  2. In a large skillet, heat vegetable oil over medium-high heat. Add tofu and cook until crispy, about 5 minutes per side. Remove tofu from skillet and set aside.
  3. In the same skillet, add garlic, bell pepper, carrots, and bean sprouts. Stir-fry for 3-4 minutes until vegetables are tender.
  4. Add cooked noodles, tofu, green onions, and the sauce to the skillet. Toss everything together and cook for another 2-3 minutes.
