Ingredients

  • 1 medium butternut squash, peeled and diced

  • 4 tablespoons butter
  • 6-8 fresh sage leaves
  • 1/2 cup grated Parmesan cheese

Directions

  1. Preheat the oven to 400°F (200°C).
  2. Place the diced butternut squash on a baking sheet. Drizzle with 2 tablespoons of olive oil, season with salt and pepper, and toss to coat. Roast in the preheated oven for 20-25 minutes, or until the squash is tender and slightly caramelized.
  3. While the squash is roasting, bring a large pot of salted water to a boil. Cook the gnocchi according to package instructions, then drain and set aside.
  4. In a large skillet, heat the remaining 2 tablespoons of olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
