Ingredients

  • For the Meatballs:
  • - 1 cup of plant-based ground meat substitute
  • - 1/2 cup of breadcrumbs
  • - 1/4 cup of finely chopped onion
  • - 2 cloves of garlic, minced
  • - 2 tablespoons of nutritional yeast
  • - 1 tablespoon of soy sauce
  • - 1 teaspoon of dried oregano
  • - 1/2 teaspoon of dried basil
  • - Salt and pepper to taste
  • - Olive oil for frying
  • For the Sauce:
  • - 1 can (28 ounces) of crushed tomatoes
  • - 1 can (14 ounces) of diced tomatoes
  • - 1/2 cup of tomato paste
  • - 1/4 cup of finely chopped onion
  • - 2 cloves of garlic, minced
  • - 1 tablespoon of olive oil
  • - 1 teaspoon of dried oregano
  • - 1/2 teaspoon of dried basil
  • - Salt and pepper to taste
  • - Fresh basil leaves for garnish
  • For the Spaghetti:
  • - 8 ounces of spaghetti noodles
  • - Salt for boiling water

Directions

  1. In a large bowl, combine all the meatball ingredients until well mixed. Shape the mixture into small meatballs, about 1 inch in diameter.
  2. Heat a drizzle of olive oil in a large skillet over medium heat. Add the meatballs and cook until browned on all sides, about 8-10 minutes. Remove the meatballs from the skillet and set aside.
  3. In the same skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until fragrant and translucent, about 2-3 minutes.
  4. Add the crushed tomatoes, diced tomatoes, tomato paste, dried oregano, dried basil, salt, and pepper to the skillet. Stir well to combine. Bring the sauce to a simmer and let it cook for 15-20 minutes, stirring occasionally.
  5. While the sauce is simmering, cook the spaghetti noodles according to package instructions in a pot of salted boiling water. Drain the noodles and set aside.
  6. Once the sauce has thickened, add the cooked meatballs back to the skillet. Stir gently to coat the meatballs with the sauce. Simmer for an additional 5 minutes to allow the flavors to meld together.
  7. Serve the spaghetti and meatballs hot, garnished with fresh basil leaves. Enjoy!
