Ingredients
- For the Meatballs:
- - 1 cup of plant-based ground meat substitute
- - 1/2 cup of breadcrumbs
- - 1/4 cup of finely chopped onion
- - 2 cloves of garlic, minced
- - 2 tablespoons of nutritional yeast
- - 1 tablespoon of soy sauce
- - 1 teaspoon of dried oregano
- - 1/2 teaspoon of dried basil
- - Salt and pepper to taste
- - Olive oil for frying
- For the Sauce:
- - 1 can (28 ounces) of crushed tomatoes
- - 1 can (14 ounces) of diced tomatoes
- - 1/2 cup of tomato paste
- - 1/4 cup of finely chopped onion
- - 2 cloves of garlic, minced
- - 1 tablespoon of olive oil
- - 1 teaspoon of dried oregano
- - 1/2 teaspoon of dried basil
- - Salt and pepper to taste
- - Fresh basil leaves for garnish
- For the Spaghetti:
- - 8 ounces of spaghetti noodles
- - Salt for boiling water
Directions
- In a large bowl, combine all the meatball ingredients until well mixed. Shape the mixture into small meatballs, about 1 inch in diameter.
- Heat a drizzle of olive oil in a large skillet over medium heat. Add the meatballs and cook until browned on all sides, about 8-10 minutes. Remove the meatballs from the skillet and set aside.
- In the same skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until fragrant and translucent, about 2-3 minutes.
- Add the crushed tomatoes, diced tomatoes, tomato paste, dried oregano, dried basil, salt, and pepper to the skillet. Stir well to combine. Bring the sauce to a simmer and let it cook for 15-20 minutes, stirring occasionally.
- While the sauce is simmering, cook the spaghetti noodles according to package instructions in a pot of salted boiling water. Drain the noodles and set aside.
