Ingredients
- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 1 cup fresh raspberries
- ⅓ cup granulated sugar
- 2 tablespoons cornstarch
- 1 ½ cups whole milk
- ½ cup heavy cream
- ⅓ cup granulated sugar
- ¼ teaspoon salt
- 3 large egg yolks
- 2 teaspoons vanilla extract
- 1 cup whipped cream
- Fresh raspberries, for garnish

- In a bowl, combine graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch springform pan to form the crust. Set aside.
- In a saucepan, mix together raspberries, sugar, and cornstarch. Cook over medium heat, stirring constantly, until the mixture thickens and the raspberries break down. Remove from heat and let it cool.
- In another saucepan, combine milk, heavy cream, sugar, and salt. Heat over medium heat until it reaches a simmer. In a separate bowl, whisk together the egg yolks. Slowly pour half of the hot milk mixture into the egg yolks, whisking constantly.
- Pour the egg yolk mixture back into the saucepan with the remaining milk mixture. Cook over medium heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon. Remove from heat and stir in vanilla extract.
- Pour half of the custard mixture onto the prepared crust and spread it evenly. Spoon half of the raspberry sauce on top and swirl it with a knife to create a marbled effect.
- Repeat the layers with the remaining custard and raspberry sauce. Smooth the top and refrigerate for at least 4 hours or until set.
