Ingredients
- 4 large bell peppers
- 1 cup cooked lentils
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can diced tomatoes
- 1 cup cooked quinoa
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- 1/2 cup vegan cheese, shredded (optional)
- Fresh parsley for garnish
Directions
- Preheat the oven to 375°F
- Cut the tops off the bell peppers and remove the seeds
- In a large skillet, sauté the onion and garlic until translucent
- Add the cooked lentils, quinoa, diced tomatoes, cumin, paprika, salt, and pepper. Cook for 5-7 minutes
- Stuff the peppers with the lentil mixture and place in a baking dish
- Cover with foil and bake for 30 minutes
- Remove the foil, sprinkle vegan cheese on top (if using), and bake for additional 10 minutes
