Ingredients

  • 4 large bell peppers
  • 1 cup cooked lentils
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can diced tomatoes
  • 1 cup cooked quinoa
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • 1/2 cup vegan cheese, shredded (optional)
  • Fresh parsley for garnish

Directions

  1. Preheat the oven to 375°F
  2. Cut the tops off the bell peppers and remove the seeds
  3. In a large skillet, sauté the onion and garlic until translucent
  4. Add the cooked lentils, quinoa, diced tomatoes, cumin, paprika, salt, and pepper. Cook for 5-7 minutes
  5. Stuff the peppers with the lentil mixture and place in a baking dish
  6. Cover with foil and bake for 30 minutes
  7. Remove the foil, sprinkle vegan cheese on top (if using), and bake for additional 10 minutes
  8. Garnish with fresh parsley and serve hot
