Ingredients

  • For the crepes:
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 1/4 cups milk
  • 1/4 teaspoon salt
  • 2 tablespoons melted butter

  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup mushrooms, sliced
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish

Directions

  1. In a mixing bowl, whisk together the flour, eggs, milk, salt, and melted butter until smooth. Let the batter rest for 10 minutes.
  2. Heat a non-stick skillet or crepe pan over medium heat. Pour 1/4 cup of the crepe batter into the center of the pan and swirl it around to evenly coat the bottom. Cook for about 1-2 minutes, until the edges start to lift and the crepe is lightly golden. Flip and cook for another 30 seconds. Transfer the cooked crepe to a plate and repeat with the remaining batter.
  3. In a large skillet, melt the butter over medium heat. Add the onions and garlic and sauté until they become translucent, about 2-3 minutes.
  4. Add the shrimp and mushrooms to the skillet and cook until the shrimp are pink and cooked through, about 3-4 minutes.
