Ingredients

  • 1 cup jasmine rice
  • 2 cups water
  • 1 can (13.5 oz) coconut milk
  • 1 cup whole milk
  • 1/2 cup granulated sugar
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup shredded coconut, toasted (optional)

Directions

  1. In a medium saucepan, rinse the jasmine rice under running water until the water runs clear. Drain well.
  2. In the same saucepan, combine the rinsed jasmine rice and water. Bring to a boil over medium heat, then reduce the heat to low and cover. Cook for 15 minutes or until the rice is tender and all the liquid is absorbed.
