Ingredients

  • 1 lb scallops
  • 1 ripe mango, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • 1 jalapeno, seeded and diced
  • Juice of 1 lime
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 4 cups fresh spinach leaves

Directions

  1. In a bowl, combine diced mango, red onion, cilantro, jalapeno, lime juice, salt, and pepper to make the salsa. Set aside.
  2. Heat olive oil in a skillet over medium-high heat.
  3. Pat dry scallops with paper towels to remove excess moisture. Season with salt and pepper.
