Ingredients

  • 2 large red bell peppers
  • 4 sub rolls
  • 8 slices of provolone cheese
  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1 teaspoon honey
  • Salt and pepper to taste
  • 1 cup shredded lettuce
  • 1/2 cup sliced red onions
  • 1/2 cup sliced pickles
  • 1/2 cup sliced black olives

Directions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the bell peppers in half and remove the seeds and stems.
  3. Place the pepper halves on a baking sheet, cut side down.
  4. Roast the peppers in the preheated oven for about 20-25 minutes, or until the skin is charred and blistered.
  5. Remove the peppers from the oven and let them cool for a few minutes.
  6. Once the peppers are cool enough to handle, peel off the charred skin.
