Ingredients

  • 1 baguette, sliced into ½-inch thick rounds
  • 2 cups seedless grapes (red or black), washed and stemmed
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 4 ounces creamy goat cheese
  • 2 tablespoons fresh basil, chopped
  • 2 tablespoons fresh thyme leaves
  • Salt and pepper to taste

Directions

  1. Preheat your oven to 400°F (200°C).
  2. Place the grape clusters on a baking sheet and drizzle with 1 tablespoon of olive oil and balsamic vinegar. Sprinkle with salt and pepper and toss to coat.
  3. Roast the grapes in the preheated oven for 10-15 minutes until they start to soften and release their juices. Remove from the oven and let them cool slightly.
  4. While the grapes are roasting, brush the baguette slices with the remaining olive oil. Arrange them on another baking sheet and toast in the oven for about 5 minutes until golden brown.
  5. Spread a generous amount of goat cheese on each toasted baguette slice.
  6. Top the goat cheese with roasted grapes, pressing them gently to release some of their juices.
  7. Sprinkle the crostini with fresh basil and thyme leaves.
  8. Season with salt and pepper to taste.
  9. Serve the roasted grape crostini immediately and enjoy!
