  • 2 ripe bananas, mashed
  • 1/2 cup honey
  • 1/4 cup coconut oil, melted

  • 1 1/2 cups whole wheat flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 2 tablespoons chia seeds
  • 1/2 cup chopped walnuts (optional)
  • 1/2 cup dark chocolate chips (optional)

Directions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large mixing bowl, combine the mashed bananas, honey, coconut oil, Greek yogurt, eggs, and vanilla extract. Mix well.
  3. In a separate bowl, whisk together the whole wheat flour, baking soda, baking powder, salt, cinnamon, and chia seeds.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  5. If desired, fold in the chopped walnuts and dark chocolate chips.
  6. Scoop the batter into the prepared muffin tin, filling each cup about 2/3 full.
  7. Bake for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
