Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt and black pepper to taste
  • 1/2 cup all-purpose flour
  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 8 ounces button mushrooms, sliced
  • 1/2 cup Marsala wine
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 4 slices mozzarella cheese
  • Fresh parsley, chopped (for garnish)

Directions

  1. Preheat the oven to 400°F (200°C).
  2. Season the chicken breasts with salt and pepper on both sides.
  3. Place the flour in a shallow bowl. Dredge the chicken breasts in flour, shaking off any excess.
  4. In a large skillet, melt 2 tablespoons of butter with 1 tablespoon of olive oil over medium heat.
  5. Add the chicken breasts to the skillet and cook until golden brown on both sides, about 4-5 minutes per side. Remove the chicken from the skillet and set aside.
  6. In the same skillet, melt the remaining 2 tablespoons of butter and add the sliced mushrooms. Cook until the mushrooms are browned and tender, about 5-6 minutes.
  7. Pour the Marsala wine into the skillet and stir to deglaze the pan, scraping up any browned bits from the bottom.
  8. Add the chicken broth and bring to a simmer. Cook for about 5 minutes until the mixture reduces slightly.
  9. Stir in the heavy cream and season with salt and pepper to taste. Simmer for another 2-3 minutes until the sauce thickens.
  10. Return the chicken breasts to the skillet and spoon the sauce over them. Place a slice of mozzarella cheese on top of each chicken breast.
  11. Transfer the skillet to the preheated oven and bake for 10-12 minutes or until the cheese is melted and bubbly.
  12. Remove the skillet from the oven and let the chicken rest for a few minutes before serving.
  13. Garnish with chopped fresh parsley and serve hot with pasta or mashed potatoes.
