Ingredients

  • 1 pound of shrimp, peeled and deveined
  • 1 cup of jasmine rice
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 small onion, diced
  • 3 cloves of garlic, minced
  • 1 tablespoon of olive oil
  • 1 tablespoon of soy sauce
  • 1 tablespoon of fish sauce
  • 1 tablespoon of lime juice
  • 1 teaspoon of ground cumin
  • 1 teaspoon of paprika
  • 1/2 teaspoon of red pepper flakes
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Directions

  1. Cook the jasmine rice according to package instructions.
  2. Meanwhile, in a large skillet, heat the olive oil over medium heat.
  3. Add the diced onion and minced garlic to the skillet and cook until softened and fragrant, about 2 minutes.
  4. Add the diced bell peppers to the skillet and cook for another 2 minutes, until slightly tender.
  5. Push the vegetables to one side of the skillet and add the shrimp in a single layer.
  6. Cook the shrimp for 2-3 minutes per side, until pink and cooked through.
