It's the perfect dessert for any occasion, and it's simple enough for even beginner bakers to master. With just a few ingredients and some basic baking skills, you can create a mouthwatering pie that will impress your family and friends. So roll up your sleeves, grab some peaches, and let's get baking!

Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 cup unsalted butter, cold and cubed
  • 1/2 cup ice water
  • 6 cups fresh peaches, peeled and sliced
  • 1 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon almond extract
  • 1 tablespoon lemon juice
  • 1 egg, beaten (for egg wash)
  • 1 tablespoon turbinado sugar (for sprinkling)

Directions

  1. In a large mixing bowl, whisk together the flour and salt. Add the cold cubed butter and use a pastry cutter or your hands to cut the butter into the flour mixture until it resembles coarse crumbs.
  2. Gradually add the ice water, a few tablespoons at a time, and mix until the dough comes together. Divide the dough in half, shape each half into a disc, wrap them in plastic wrap, and refrigerate for at least 30 minutes.
  3. Preheat the oven to 375°F (190°C).
  4. In a separate bowl, combine the sliced peaches, sugar, cornstarch, cinnamon, almond extract, and lemon juice. Toss gently until the peaches are evenly coated.
  5. On a lightly floured surface, roll out one disc of the chilled dough into a circle large enough to fit your pie plate. Transfer the dough to the pie plate and trim any excess overhang.
  6. Pour the peach filling into the pie crust and spread it out evenly.
  7. Roll out the second disc of dough into a similar-sized circle. Using a sharp knife or a pastry wheel, cut the dough into strips for the lattice crust.
  8. Carefully weave the strips over the peach filling in a lattice pattern. Trim any excess and crimp the edges to seal the crust.
  9. Brush the lattice crust with beaten egg, then sprinkle with turbinado sugar for a golden finish.
  10. Place the pie on a baking sheet to catch any drips, and bake for 45-50 minutes, or until the crust is golden brown and the filling is bubbling.
  11. Remove from the oven and let the pie cool for at least 2 hours before serving. This allows the filling to set.
  12. Serve slices of the Easy French Peach Pie on their own or with a scoop of vanilla ice cream for an extra treat!
