This recipe will teach you how to make a perfect roast chicken with a rich and flavorful pan gravy. The chicken is seasoned with a blend of herbs, roasted until golden and crispy on the outside, while remaining tender and juicy on the inside. The pan gravy is made by deglazing the roasting pan with chicken broth and adding a few additional ingredients to enhance the flavor. Serve this roast chicken with pan gravy for a comforting and delicious meal that your whole family will love.

Ingredients

  • 1 whole chicken (about 4-5 pounds)
  • Salt and pepper to taste
  • 1 tablespoon dried thyme
  • 1 tablespoon dried rosemary
  • 1 tablespoon dried sage
  • 2 tablespoons unsalted butter, melted
  • 1 cup chicken broth
  • 2 tablespoons all-purpose flour

Directions

  1. Preheat your oven to 425°F (220°C).
  2. Wash the chicken thoroughly and pat it dry with paper towels.
  3. Season the chicken generously with salt and pepper, both inside and outside.
  4. In a small bowl, mix together the dried thyme, rosemary, and sage.
  5. Rub the herb mixture all over the chicken, making sure to cover it evenly.
  6. Place the chicken on a roasting rack, breast side up.
  7. Brush the melted butter all over the chicken.
  8. Pour 1/2 cup of chicken broth into the bottom of the roasting pan.
  9. Place the roasting pan in the preheated oven and roast the chicken for about 1 hour or until the internal temperature reaches 165°F (74°C) when measured with a meat thermometer.
  10. While the chicken is roasting, prepare the pan gravy.
  11. Remove the chicken from the oven and transfer it to a cutting board. Let it rest for 10-15 minutes before carving.
  12. Place the roasting pan on the stovetop over medium heat.
  13. Add the remaining 1/2 cup of chicken broth to the pan drippings and stir to scrape up any browned bits stuck to the bottom of the pan.
  14. Sprinkle the flour over the pan drippings and whisk well to combine.
  15. Cook the gravy for about 5 minutes or until it thickens to your desired consistency.
  16. Season the gravy with salt and pepper to taste.
  17. Carve the roasted chicken and serve with the pan gravy. Enjoy!
