Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves of garlic, minced
  • 1 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon ground turmeric
  • 1/4 cup brown sugar
  • 1 cup chicken broth
  • 2 cups chopped rhubarb
  • 1 tablespoon cornstarch mixed with 2 tablespoons water
  • Fresh cilantro for garnish

Directions

  1. Season the chicken breasts with salt and pepper on both sides.
  2. In a large skillet, heat the olive oil over medium heat. Add the chicken breasts and cook until browned on both sides, about 5 minutes per side. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the chopped onion and minced garlic. Cook until softened and fragrant, about 5 minutes.
  4. Add the curry powder, ground cumin, ground coriander, and ground turmeric to the skillet. Stir well to coat the onions and garlic with the spices.
  5. Add the brown sugar and chicken broth to the skillet. Stir until the sugar is dissolved and the mixture is well combined.
  6. Return the chicken breasts to the skillet, along with any juices that have accumulated. Cover the skillet and let the chicken simmer in the sauce for 15 minutes, or until cooked through.
  7. Meanwhile, in a separate saucepan, cook the chopped rhubarb over medium heat until it breaks down and becomes soft, about 10 minutes.
  8. Once the rhubarb is cooked, use a blender or immersion blender to puree it until smooth.
  9. Return the rhubarb puree to the saucepan and stir in the cornstarch mixture. Cook over low heat until the sauce thickens slightly.
  10. Remove the chicken breasts from the skillet and place them on a serving platter. Spoon the rhubarb sauce over the chicken.
  11. Garnish with fresh cilantro and serve hot. Enjoy!
