  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Directions

  1. Preheat the oven to 400°F (200°C).
  2. Place the salmon fillet on a baking sheet lined with parchment paper. Season with salt, pepper, and smoked paprika. Bake for 15 minutes or until cooked through. Set aside.
  3. Cook the penne pasta according to package instructions. Drain and set aside.
  4. Meanwhile, roast the red bell peppers over an open flame or under the broiler until the skin is charred. Place them in a bowl, cover with plastic wrap, and let them steam for 10 minutes. Peel off the skin, remove the seeds, and chop the flesh.
  5. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
  6. Add the chopped red bell peppers to the skillet and cook for another 5 minutes, stirring occasionally.
  7. Transfer the mixture to a blender or food processor and blend until smooth. Return it to the skillet.
  8. Stir in the heavy cream and grated Parmesan cheese. Season with salt and pepper to taste. Cook for 2-3 minutes until the sauce is heated through and slightly thickened.
  9. Flake the baked salmon into bite-sized pieces and add them to the skillet. Gently fold in the cooked penne pasta, ensuring everything is well coated with the sauce.
  10. Cook for another 2-3 minutes until the salmon is heated through.
