Ingredients

  • For the Ravioli:
  • - 2 cups all-purpose flour
  • - 2 large eggs
  • - 1/2 teaspoon salt
  • - 1/4 cup water
  • - 1 cup ricotta cheese
  • - 1/4 cup grated Parmesan cheese
  • - 1/4 teaspoon garlic powder
  • - 1/4 teaspoon nutmeg
  • - Salt and pepper to taste
  • For the Shrimp Rose Sauce:
  • - 1 pound shrimp, peeled and deveined
  • - 2 tablespoons butter
  • - 2 cloves garlic, minced
  • - 1 cup heavy cream
  • - 1/2 cup tomato sauce
  • - 1/4 cup grated Parmesan cheese
  • - 1/4 teaspoon red pepper flakes
  • - Salt and pepper to taste
  • For Serving:
  • - Freshly grated Parmesan cheese
  • - Chopped fresh parsley

Directions

  1. In a large mixing bowl, combine the flour and salt. Make a well in the center and add the eggs and water. Mix until a dough forms.
  2. Transfer the dough to a floured surface and knead for about 5 minutes, or until smooth and elastic. Wrap in plastic wrap and let it rest for 20 minutes.
  3. In a separate mixing bowl, combine the ricotta cheese, grated Parmesan cheese, garlic powder, nutmeg, salt, and pepper. Mix well.
  4. Divide the dough into four equal portions. Take one portion and flatten it with a rolling pin. Roll it through a pasta machine or continue rolling manually until it becomes a thin sheet.
  5. Place small spoonfuls of the cheese mixture onto the rolled pasta sheet, leaving enough space in between. Brush water around the filling to moisten the dough.
  6. Roll another portion of dough into a thin sheet and carefully place it on top of the filled pasta sheet. Press gently around the filling to seal the ravioli.
  7. Use a ravioli cutter or a knife to cut out individual ravioli. Repeat the process with the remaining dough and filling.
  8. In a large pot, bring salted water to a boil. Cook the ravioli for about 4-5 minutes or until they float to the surface. Remove with a slotted spoon and set aside.
  9. In a skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  10. Add the shrimp to the skillet and cook until they turn pink and opaque, approximately 2-3 minutes per side. Remove the shrimp from the skillet and set aside.
  11. In the same skillet, pour in the heavy cream and tomato sauce. Stir well to combine.
  12. Add the grated Parmesan cheese and red pepper flakes to the sauce. Season with salt and pepper to taste. Stir until the sauce thickens slightly.
  13. Return the cooked shrimp to the skillet and toss gently to coat them in the sauce. Cook for an additional minute to heat through.
  14. To serve, place the cooked ravioli onto individual serving plates. Spoon the shrimp rose sauce over the ravioli.
  15. Sprinkle freshly grated Parmesan cheese and chopped parsley on top for garnish.
  16. Enjoy your delicious homemade ravioli with shrimp rose sauce!
