Ingredients

  • 2 large red bell peppers
  • 1 medium onion, chopped

  • Salt and pepper to taste

Directions

  1. Preheat the oven to 400°F (200°C).
  2. Place the red bell peppers on a baking sheet and roast them in the oven for about 30 minutes, until the skins are charred and blistered.
  3. Remove the peppers from the oven and place them in a bowl. Cover the bowl with plastic wrap and let the peppers cool for 10 minutes. This will help loosen the skins.
  4. Once the peppers are cool enough to handle, remove the skins, seeds, and stems. Chop the roasted red peppers into small pieces.
