Ingredients
- 2 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1/4 tsp ground nutmeg
- 1/4 tsp ground cloves
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1/2 cup canned pumpkin puree
Directions
- In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, ginger, nutmeg, and cloves.
- In a separate large bowl, cream together butter and sugar until light and fluffy. Add egg and vanilla, mix until well combined.
- Mix in pumpkin puree until smooth.
- Gradually add dry ingredients to wet ingredients, mixing until dough forms.
- Divide dough in half, wrap in plastic and refrigerate for at least 1 hour.
- Preheat oven to 350°F (180°C) and line baking sheets with parchment paper.
- On a floured surface, roll out dough to 1/4 inch thickness.
- Cut out shapes using cookie cutters and place on prepared baking sheets.
- Bake for 10-12 minutes, until edges are lightly golden.
- Let cookies cool on baking sheets for a few minutes before transferring to wire racks to cool completely.
- Once cooled, decorate with cream cheese frosting and enjoy!
