This brandade recipe is a modern twist on the classic French dish. Creamy mashed potatoes are mixed with salted cod, garlic, and olive oil, then topped with a crispy breadcrumb and parmesan crust. Perfect for a cozy dinner party or a special family meal.

Ingredients

  • 1 lb salted cod fillets, soaked and drained
  • 2 lbs Yukon Gold potatoes, peeled and quartered
  • 4 cloves garlic, minced
  • 1/2 cup olive oil
  • 1/2 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • 1 cup breadcrumbs
  • Salt and pepper to taste

Directions

  1. In a large pot, cover the salted cod with water and bring to a gentle simmer. Cook for 10 minutes, then drain and flake the cod.
  2. In a separate pot, boil the potatoes until tender. Drain and mash with the garlic, olive oil, and heavy cream until creamy.
  3. Fold in the flaked cod and season with salt and pepper. Spread the mixture in a baking dish.
  4. In a small bowl, mix the parmesan cheese and breadcrumbs. Sprinkle over the top of the brandade.
  5. Bake in a preheated oven at 400°F for 20-25 minutes, or until the top is golden and crispy.
  6. Serve hot with a side of greens or crusty bread for a complete meal.
