Directions

  1. In a small bowl, mix together chili powder, cumin powder, paprika, onion powder, garlic powder, salt, and black pepper to create a spice rub.
  2. Rub the pork shoulder roast generously with the spice rub, covering all sides.
  3. Heat olive oil in a large pot or Dutch oven over medium-high heat. Brown the pork shoulder on all sides until a crust forms, about 5 minutes per side.
  4. Remove the pork from the pot and set aside. In the same pot, add diced onion, red bell pepper, green bell pepper, jalapeno pepper, and minced garlic. Cook until the vegetables have softened, about 5 minutes.
  5. Add diced tomatoes, tomato paste, drained and rinsed kidney beans, chicken broth, and lime juice to the pot. Stir to combine.
  6. Return the pork shoulder to the pot, nestling it into the chili mixture. Bring the chili to a simmer.
  7. Reduce the heat to low, cover the pot, and let the chili simmer for 2-3 hours, or until the pork is tender and easily shreds with a fork.
  8. Using two forks, shred the pork into bite-sized pieces.
