Ingredients

  • 6 bone-in, skin-on chicken thighs
  • 1/4 cup soy sauce
  • 1/4 cup mirin (sweet rice wine)
  • 2 tablespoons rice vinegar
  • 2 tablespoons honey
  • 1 tablespoon grated fresh ginger
  • 2 cloves garlic, minced
  • 1 tablespoon sesame oil
  • 2 green onions, sliced

Directions

  1. In a bowl, whisk together soy sauce, mirin, rice vinegar, honey, grated ginger, minced garlic, and sesame oil to make the teriyaki sauce.
  2. Place the chicken thighs in a ziplock bag and pour in half of the teriyaki sauce. Reserve the remaining sauce for basting.
  3. Close the bag and massage the chicken thighs to evenly coat them in the teriyaki sauce. Marinate in the refrigerator for at least 30 minutes, or overnight for best results.
  4. Preheat the oven to 425°F (220°C).
  5. Line a baking sheet with aluminum foil and place a wire rack on top. Arrange the chicken thighs on the wire rack, skin side up.
  6. Bake in the preheated oven for 25 minutes.
  7. After 25 minutes, remove the chicken from the oven and baste with the reserved teriyaki sauce.
  8. Return the chicken to the oven and bake for another 10-15 minutes, until the chicken is fully cooked and the glaze is sticky and caramelized.
  9. Once cooked, remove the chicken from the oven and let it rest for a few minutes.
  10. Garnish with sliced green onions and serve hot with steamed rice and stir-fried vegetables.
