Ingredients

  • 1 cup rolled oats
  • 1 cup all-purpose flour

Directions

  1. In a large mixing bowl, whisk together the oats, flour, baking soda, cinnamon, and salt.
  2. In another bowl, cream the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the egg and vanilla extract to the butter mixture.
  4. Gradually add the dry ingredient mixture to the butter mixture, mixing until just combined.
  5. Stir in the raisins and chopped walnuts.
  6. Cover the dough and refrigerate for 30 minutes.
  7. Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
  8. Drop rounded tablespoons of the chilled dough onto the prepared baking sheets, spacing them about 2 inches apart.
  9. Bake for 10-12 minutes or until the edges are lightly golden brown.
  10. Let the cookies cool on the baking sheets for 5 minutes, then transfer them to wire racks to cool completely.
  11. In a separate bowl, beat the cream cheese, softened butter, and vanilla extract until smooth.
  12. Gradually add the powdered sugar, beating until creamy and well combined.
  13. Spread a generous amount of the cream cheese filling on the flat side of half of the cooled cookies.
  14. Top with the remaining cookies to form sandwich-like pies.
