Ingredients

  • 1 and 3/4 cups all-purpose flour
  • 1 and 1/2 teaspoons baking powder
  • 1 and 1/2 teaspoons baking soda
  • 3/4 cup unsweetened cocoa powder
  • 3/4 cup boiling water
  • 1/2 cup vegetable oil
  • 2 cups granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 cup whole milk
  • 1/2 cup strong brewed coffee, cooled
  • For the Frosting:
  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup whole milk
  • 1 teaspoon vanilla extract

Directions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a medium bowl, sift together the flour, baking powder, baking soda, and cocoa powder.
  3. In a separate bowl, whisk together the boiling water and cocoa powder until smooth. Set aside to cool.
  4. In a large mixing bowl, beat together the vegetable oil, granulated sugar, eggs, vanilla extract, and salt until well combined.
  5. Add the flour mixture to the wet ingredients in three parts, alternating with the milk. Begin and end with the flour mixture. Mix until just combined.
  6. Stir in the cooled cocoa mixture and brewed coffee until the batter is smooth.
  7. Divide the batter evenly between the prepared cake pans. Smooth the tops with a spatula.
  8. Bake for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
  9. Remove from the oven and let the cakes cool in the pans for 10 minutes. Then, transfer them to a wire rack to cool completely.
  10. To prepare the frosting, beat the softened butter in a large bowl until creamy. Gradually add the powdered sugar and cocoa powder, alternating with the milk and vanilla extract. Beat until the frosting is smooth and fluffy.
  11. Once the cakes have cooled, frost the top of one cake layer with a generous amount of frosting. Place the second cake layer on top and frost the entire cake, covering the top and sides.
  12. Decorate the cake as desired, such as with chocolate shavings or fresh berries. Slice and serve the Nairobi Chocolate Cake at room temperature. Enjoy!
