The bok choy adds a crunchy texture and is cooked with garlic and soy sauce. This dish is packed with umami flavors and is perfect for a quick and easy weeknight dinner.

Ingredients

  • 4 salmon fillets
  • 1/4 cup white miso paste
  • 2 tablespoons mirin
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 4 baby bok choy
  • 2 cloves garlic, minced
  • 2 tablespoons vegetable oil
  • Salt and pepper, to taste
  • Toasted sesame seeds, for garnish
  • Sliced green onions, for garnish

Directions

  1. In a small bowl, whisk together the miso paste, mirin, soy sauce, and honey.
  2. Place the salmon fillets in a shallow dish and pour the miso glaze over them. Make sure the salmon is well-coated. Let it marinate for 15 minutes.
  3. Preheat the grill to medium-high heat.
  4. While the grill is preheating, prepare the bok choy. Cut off the bottom of each bok choy and separate the leaves. Rinse them thoroughly.
  5. In a large skillet, heat the vegetable oil over medium heat. Add the minced garlic and sauté for 1-2 minutes, until fragrant.
  6. Add the bok choy leaves to the skillet and cook for 2-3 minutes, stirring occasionally. Season with salt and pepper.
  7. Meanwhile, grill the marinated salmon fillets for 4-5 minutes per side, or until cooked to your desired doneness.
  8. Once the salmon and bok choy are cooked, remove them from the heat.
  9. Serve the miso-glazed salmon over a bed of sautéed bok choy. Garnish with toasted sesame seeds and sliced green onions.
  10. Enjoy this delicious and healthy meal!
