Directions
- Wash the spinach leaves thoroughly and blanch them in boiling water for 2-3 minutes. Drain and immediately transfer to a bowl of ice-cold water to retain the vibrant green color. Drain again and blend into a smooth paste using a blender or food processor. Set aside.
- Heat the ghee or oil in a large pan over medium heat. Add the cumin seeds and mustard seeds. Once the seeds start to crackle, add the chopped onions and sauté until they turn golden brown.
- Add the minced garlic, grated ginger, and chopped green chilies. Sauté for another minute until the raw smell of garlic disappears.
- Reduce the heat to low and add the turmeric powder, garam masala, red chili powder, and cayenne pepper (if using). Mix well to coat the onions and spices evenly.
- Add the blended spinach paste to the pan and stir well to combine with the onion-spice mixture. Cook for 5-7 minutes, stirring occasionally.
- Season with salt and adjust the spices according to your taste. If the mixture is too thick, you can add a little water to achieve the desired consistency.
- Simmer the saag for another 5 minutes, allowing the flavors to blend together. Remove from heat.
