Ingredients

  • 500 grams fresh spinach leaves
  • 2 medium onions, finely chopped
  • 4 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 2 green chilies, chopped
  • 1 teaspoon cumin seeds
  • 1 teaspoon mustard seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon cayenne pepper (optional)
  • 2 tablespoons ghee or oil
  • Salt to taste
  • Fresh cilantro, for garnish

Directions

  1. Wash the spinach leaves thoroughly and blanch them in boiling water for 2-3 minutes. Drain and immediately transfer to a bowl of ice-cold water to retain the vibrant green color. Drain again and blend into a smooth paste using a blender or food processor. Set aside.
  2. Heat the ghee or oil in a large pan over medium heat. Add the cumin seeds and mustard seeds. Once the seeds start to crackle, add the chopped onions and sauté until they turn golden brown.
  3. Add the minced garlic, grated ginger, and chopped green chilies. Sauté for another minute until the raw smell of garlic disappears.
  4. Reduce the heat to low and add the turmeric powder, garam masala, red chili powder, and cayenne pepper (if using). Mix well to coat the onions and spices evenly.
  5. Add the blended spinach paste to the pan and stir well to combine with the onion-spice mixture. Cook for 5-7 minutes, stirring occasionally.
  6. Season with salt and adjust the spices according to your taste. If the mixture is too thick, you can add a little water to achieve the desired consistency.
  7. Simmer the saag for another 5 minutes, allowing the flavors to blend together. Remove from heat.
  8. Garnish with fresh cilantro and serve hot with naan bread or steamed rice.
