Ingredients

  • 2 cups cooked leftover turkey, shredded or diced
  • 1 cup frozen peas
  • 1 cup frozen carrots
  • 1 cup frozen corn
  • 1/2 cup diced onion
  • 1/2 cup diced celery
  • 1/4 cup unsalted butter
  • 1/4 cup all-purpose flour
  • 2 cups turkey or chicken broth
  • 1 cup whole milk
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 package refrigerated pie crusts

Directions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, melt the butter over medium heat. Add the diced onion and celery and cook until they become translucent.
  3. Add the flour to the skillet and stir continuously for 1-2 minutes to create a roux.
  4. Slowly whisk in the turkey or chicken broth and milk until the mixture is smooth.
  5. Add the frozen peas, carrots, and corn to the skillet and cook for an additional 5 minutes, or until the vegetables are heated through.
  6. Stir in the shredded turkey and season with dried thyme, salt, and black pepper. Cook for another 2-3 minutes to allow the flavors to combine.
  7. Remove the skillet from the heat and set aside.
  8. Unroll one refrigerated pie crust and press it into the bottom of a deep-dish pie plate.
  9. Pour the turkey and vegetable mixture into the pie crust.
  10. Unroll the second pie crust and place it on top of the filling. Press the edges of the crusts together to seal.
  11. Use a knife to make several small slits in the top crust to allow steam to escape.
  12. Place the pie plate on a baking sheet and bake in the preheated oven for 35-40 minutes, or until the crust is golden brown and the filling is bubbly.
  13. Remove the pot pie from the oven and allow it to cool for a few minutes before serving.
  14. Serve hot and enjoy!
