Ingredients
- 4 boneless, skinless chicken breasts
- 2 cups chicken broth
- 2 tablespoons vegetable oil
- 2 dried ancho chili peppers
- 2 dried guajillo chili peppers
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tomatoes, chopped
- 1/4 cup almonds
- 1/4 cup raisins
- 1/4 cup sesame seeds
- 1/4 cup unsweetened cocoa powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/2 teaspoon oregano
- 1/4 teaspoon cloves
- 1/4 teaspoon nutmeg
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
- 2 tablespoons sugar
- 2 tablespoons peanut butter
- 2 ounces unsweetened chocolate
Directions
- In a large pot, heat the vegetable oil over medium heat. Add the chicken breasts and cook until browned on both sides, about 5 minutes per side. Remove the chicken from the pot and set aside.
- In the same pot, add the dried chili peppers and toast them for a few seconds on each side until fragrant. Remove from the pot and set aside.
- In a blender or food processor, combine the toasted chili peppers, onion, garlic, tomatoes, almonds, raisins, sesame seeds, cocoa powder, cinnamon, cumin, coriander, oregano, cloves, nutmeg, black pepper, salt, sugar, peanut butter, and unsweetened chocolate. Blend until smooth, adding a little chicken broth if needed to achieve a thick sauce consistency.
- Pour the sauce into the pot and add the remaining chicken broth. Bring to a simmer over medium-low heat.
- Return the browned chicken breasts to the pot, nestling them into the sauce. Cover the pot and let the chicken simmer in the sauce for 30-40 minutes, or until the chicken is cooked through and tender.
- Once cooked, remove the chicken from the pot and transfer it to a cutting board. Shred the chicken using two forks and return it to the pot, stirring to coat it in the sauce.
- Serve the Super Chicken Mole over rice or with warm tortillas. Garnish with sesame seeds and chopped cilantro, if desired. Enjoy!
