Ingredients

  • 1 pound ground beef
  • 1 small onion, finely diced

  • 1/4 teaspoon black pepper

  • 12 egg roll wrappers

Directions

  1. In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  2. Add the diced onion and minced garlic to the skillet and cook for another 2-3 minutes, until the onion is translucent.
  3. Stir in the chili powder, cumin powder, paprika, salt, and black pepper. Cook for an additional 2 minutes to allow the flavors to meld.
  4. Add the black beans, corn, and shredded cheddar cheese to the skillet. Stir until well combined and the cheese is melted.
  5. Lay an egg roll wrapper on a flat surface. Spoon about 1/4 cup of the filling onto the center of the wrapper.
  6. Fold the bottom corner of the wrapper over the filling, then fold in the sides. Roll the wrapper tightly to enclose the filling, sealing the edges with a little water.
  7. Repeat with the remaining wrappers and filling.
  8. In a large, deep skillet, heat enough oil to submerge the egg rolls. Fry the egg rolls in batches for about 3-4 minutes, or until golden brown and crispy.
  9. Remove the egg rolls from the oil using a slotted spoon and place them on a paper towel-lined plate to drain excess oil.
  10. Serve the Mexican egg rolls hot with salsa, guacamole, or sour cream for dipping.
